Ricotta cheese is just an extraordinary product! It’s light, sweet, digestible and it can be used in so many ways (from starters to desserts)! Its high content in water makes it difficult to preserve for long periods, though. That’s why we have set up a process that turnes ricotta into a long-life cheese, making its taste even more palatable at the same time. Ricotta is left to dry for some days in a refrigerated and airy space. Light salting helps to reduce the water content. When ricotta has reached its right consistency, its surface is massaged with extra-vergin olive oil and aromatic essences (the latter also has an anti-septic function). Then ricotta is vacuum-sealed (it keeps fresh for over 6 months).
