In our territory sheep ricotta has always been an “ever-present” food, produced with traditional methods and freshly served on the table for every day use. In order to preserve it, sometimes it used to be salted or dried in the sun. This way, the taste becomes stronger, so that it can be used as dressing by grating it onto first dishes. Our smoked ricotta cheese, delicate and ripened at the same time thanks toi light salting and no added or artificial preservative is here combined with rosemary. This balanced mix will satisfy the most demanding gourmets. It is one of the most beloved dishes of our line, as it can be eaten as starter as well as at the end of your meal like a dessert, due to its properties particularly beneficial for the liver.
