The starting point of this recipe is our juniper-smoked ricotta cheese (awarded among over 600 dishes with the Golden Medal at the European Cheese Olympic Games). We then added more ingredients (“ricottina” maritata, i.e. “married” ricotta cheese) to obtain new recipes suitable for all tastes. Here we present our ricottina maritata gli spinaci, i.e. small ricotta cheese (“married”) with spinaches. The delicate taste of ricotta is combined with the extraordinary properties of spinaches: mineralizing, invigorating, cardiotonic, anti-anaemic, depurative actions, thanks to their high content in iron and cellulose.
